This gluten free, dairy free fudge is so yummy, you’d never know it was healthy!

Daniel and I did a gluten free, dairy free diet when we were trying to get pregnant with Harper.  We did away with lots of food and the thing I missed most was chocolate.  I had to create a recipe that would quench my sweet tooth but still allow me to stay on track with my food goals.  This is seriously the simplest recipe with only 3 ingredients and it’s delicious.  This easily satisfies that need for chocolate and you’d never know it was healthy! You can eat this treat guilt free!

I usually use little molds or tupperware depending on how much I want to make.  I did a little of both this time.  I did plain fudge in the circular molds and an almond fudge in a flat tupperware container and then chopped it up.  All you need is coconut oil, cocoa powder, and honey. That’s it! You can pretty much throw on whatever topping sounds good before putting it in the fridge to set. Once you pull it out, chop it up if needed and store in a mason jar…that’s what I like to use. We’ve used coconut flakes, pecans, and the list goes on.  You can be as creative as you want.

This yummy fudge doesn't last long. With only 3 ingredients, this gluten free, dairy free fudge makes for one easy and delicious dessert.
Ingredients
  • ⅓ cup coconut oil (melted)
  • ⅓ cup honey
  • ⅓ cup cocoa powder
Instructions
  1. Combine 3 ingredients in a bowl and whisk until blended.
  2. Spray mold or dish with cooking spray to ensure the fudge doesn't stick.
  3. Pour into container and add toppings if desired.
  4. Put in fridge for at least 30 minutes for the fudge to set up.
  5. Chop into pieces if needed and store in fridge for up to a week. Although, I doubt it will last that long. :)

If you don’t know anything about chemical peels, you’re going to have some downtime after it due to the peeling. This was my first one and I was a little nervous if I’m being honest. 🙈 This particular peel was the most intense one that Sunday Skin offers. To my surprise, the process really wasn’t bad at all. It’s was pretty warm on my face immediately after but the fan helped tremendously. 

My top layer of skin definitely peeled but it wasn’t crazy. I wish y’all could have felt the skin on my face after it healed! 🙌🏼 😍 It was glowing and the texture was so much better. The benefits from this treatment are endless! I’ll forever praise microneedling and chemical peels because of how they transform my skin.

Before the chaos of summer and our move happened, Before the chaos of summer and our move happened, we escaped to Mexico for a little vaca just the two of us. 🏝☀️

What a great trip to start this new chapter of our lives. We had uninterrupted time for each other. I started reading again and made it through two books. We got some serious vitamin D and put our phones down. Quite frankly, it was glorious. 

Do y’all find that the longer you’re away from social media the harder it is to come back? Disconnecting feels sooooo good and it gives you perspective. So, if you haven’t seen me on here much… that’s why. 

It’s so easy to get caught up in the rat race of social media. Especially when you run it as a business and feel the pressure to try and jump through IG’s hoops to get in front of the people who actually follow you and want to see your content. It’s a mental game that’s not fun to play. I miss the days where you could post freely. Without hashtags or any other tactics to get your picture in friends’ feed. Without wondering if the time of day is good to hit publish. Without wondering if you’ll get the likes and comments because that’s what helps you get jobs. It’s exhausting. 
** My blogger friends will feel me deeply on this. 

BUT what I do love about modern technology and these apps is the connection it’s brought me. I’ve got friends all over the US and these things keep me connected. They let me feel like I’m still a part of their lives from afar. It’s also allowed me to “meet” so many of you sweet IG friends. I’ve really enjoyed that aspect of this community over my 7 years on this app.

Hey, friends! It’s been a while since I’ve sha Hey, friends! It’s been a while since I’ve shared anything on here. The past few months have flown by insanely fast since announcing that we were moving to Louisiana. 

With a major transition happening with our family, I decided to put my phone down. I’ve spent the last few months spending time with my family, designing a new home build, packing our house, soaking in everything we loved in Franklin/Nashville, and being present. 

To be honest, it’s all been a bit overwhelming. I moved so much throughout my life and have lived in many houses. As I began to truly process this move, I realized the gravity of leaving our home behind. We built it in seven years ago and brought 2 of my babies home here. It’s the longest house I’ve ever lived in and it was with MY family.

When all the boxes were gone, I walked through the rooms and around the house remembering all of the memories through each stage of our life over the years. I tried to take it all in, to freeze those moments in my mind knowing it was the last time I’d be in that house. 

Walking out the front door one last time was the hardest thing I’ve done in a long time. I’m so thankful God brought us back here for a short time and all that came along with it. Many sweet memories were made on this porch and within these walls. This photo will always be one of my favorites. It signifies the close to this chapter of our lives in Franklin. I’m leaving a small bit of my heart here. We sure will miss you, Tennessee. ❤️
